Bell Peppers
How to Select & Store
When selecting any shape, color, or size of sweet pepper, look for those that are firm, glossy, and have green stems and unwrinkled skins. Remember to select different colors of bell peppers—they all taste sweet and are fun to munch on!

Store sweet peppers unwashed in a plastic bag in the refrigerator for up to a week. Because red bell peppers are more mature than green bell peppers, they should be used within 3–4 days.

Store fresh hot chili peppers wrapped in dry paper towels instead of plastic. They can be refrigerated for up to 3 weeks.

Sweet peppers also store very well in the freezer. After washing them, remove the stems and seeds, slice them, and put them in a plastic bag in the freezer. Remember, frozen peppers won’t taste exactly like fresh peppers, but they are great for cooking.
