Once washed, sweet peppers are ready to eat raw. Here are some easy ways to enjoy peppers:
- Dip bell pepper strips in hummus or low-fat dip. This is a quick, delicious and colorful snack!
- Add diced bell peppers to all kinds of salads: mixed green salads, bean salads, pasta salads, chicken salad and tuna salad. The possibilities are endless!
- Use sliced or diced peppers in stir fries, soups, stews, chili or rice dishes.
- Stuff bell peppers with cooked rice, pasta or grains, and bake them in a muffin tin to hold them upright.
- Grill sweet peppers on a barbecue or under a broiler for a tasty roasted flavor.
