Carrots should be firm, not rubbery. If the tops are still attached, they should be green and fresh looking. Remove the tops before refrigerating carrots in plastic. |

Bagged carrots keep for up to two weeks in the vegetable bin of the refrigerator. Keep them away from apples. Apples emit a gas called ethylene gas, which can give carrots a bitter taste. Baby carrots require no peeling - only trimming and scrubbing. Other carrots should be peeled to remove the outer skin. |
