When choosing the perfect lemon, it should be firm and glossy. Pick one out that is bright yellow without greenish spots.
A fruit that is heavy for its size and that has fine-grained skin (not too bumpy) will be the juiciest.
Avoid hard, shriveled lemons, as well as spongy soft ones.

If you are planning to use the lemons right away, you can leave them at room temperature. They will keep for about two weeks without refrigeration. Lemons stored in plastic bags in the vegetable crisper will keep for up to six weeks! That’s a long time!
